    I have three large fresh beets and don't know what to do with them ~ any ideas? I used the greens in a soup already.

    Wow..that ding dong cake subject looked fantastic I am going to go read it :-)

    Don't peel the beets, boil them like you would a potato. Let cool, remove skin, slice and put into a bottle of pickle juice, let sit a couple of days. Great for salads, or just eating.

    Or, boil the beets, peel, slice, sprinkle with lemon juice and eat hot.

    Or you can make soup out of them.

    Years and years ago I cooked fresh beets by boiling, then I peeled them, sliced and buttered them and served them hot. They were delicious, but boy, did I pay a price! I had small children at the time, so after I set the pot on the stove and turned the heat to high to "get it started", I walked away to see to the kids and forgot about the beets. By the time I went back into the kitchen, I had something to see! They were boiling and boiling and boiling and the steam had condensed all over the walls, and the walls were literally running RED along with the white painted cabinets!I had such a job ahead of me - you wouldn't believe! And I had to get it all cleaned up before hubby got home so he shouldn't know how stupid I was! He found out anyway because try as I might, the beet juice left rivulets of stains and we had to paint everything! Lesson well learned - never leave the stove unattended. Since then, I buy canned!

    Forgot to say that I learned later that you should not cut into the beets before cooking them - in other words, don't cut the top and bottoms off and, of course, don't peel them before cooking - otherwise, they bleed and that's what happend to me.

    The thing with beets, if you eat a lot of them, is they go in and out red. The first time my grandson ate them my daughter got scared and thought he was bleeding internally.

    You could make pickled beets...... they are very good cold.

    Forgot to suggest old-fashioned Harvard Beets - sweet and sour with a nice glaze - YUM
