Preheat your oven to 350. Mix up 1 lb. ground beef as you would for your regular meatloaf. Then place the mixture on a piece of heavy duty aluminum foil (about 18" long), and flatten into rectangle about 1/4"-1/2" thick. Leave about 3"-4" of the foil exposed all around. Place a layer of thin sliced ham on top to about 1/2" from the edge of the meat, then a layer of thin sliced swiss cheese on top of that. Roll up jelly roll fashion and seal the edge and the ends well. Enclose this in the foil tightly and place in baking pan with sides, (not a cookie sheet). Cook about 1 hour. Remove from oven leaving the foil closed and let stand approx. 15 min so cheese doesn't run out when you open it.
After cooling, remove carefully from foil (grease will accumulate in the bottom) ( I use 2 spatulas to remove it). Place on serving plate and cut slices about 1/2" thick.
While meatloaf is cooking, make a brown gravy, and when you serve the slices, put a bit of gravy over it. Enjoy!

This sounds good! I don't have a recipe but start with ground beef and pork sausage. Then I just open the spice cabinet and throw some in the mix.

Your house will smell like an Italian restaurant with this recipe! We love it and it's my own creation all because no one liked basic meatloaf recipes.
Italiano Meatloaf
yield: 5 mini loaves
1 lb. of ground beef
1 egg
1 tsp. Liquid Smoke
1/4 c. Quick Cooking Oats
1/2 c. Italian Garden Pasta Sauce
4 Tb. minced onion
1/2 tsp. garlic
1 tsp. Italian seasoning
1/2 tsp. Oregano
1/2 tsp. celery seeds
1/2 tsp. paprika
pinch of crushed red pepper
1 tsp. dried parsley
For the tops:
Set aside extra sauce and extra sprinklings of Oregano, Italian Seasoning and Parsley
1) In a large bowl, mix egg, oatmeal and liquid smoke together. Add pasta sauce and mix well. Mix dry spices together and add to mixture. Add ground beef and mix well.
2) In an ungreased 9 in. pie plate, shape meat loaf into 5 oval boat shapes placing in the dish with ends touching in the middle (looks like a star). Make a slight impression in the center of each and spoon 1 tsp. of Italian Garden Pasta sauce over the tops of each one. Sprinkle tops with Italian Seasoning, Oregano and mostly parsley to cover. Bake uncovered in a preheated oven @ 350-375 degrees for 40 min.
** It's always moist and because they're small, dinner is ready quicker. Grated Parmesan cheese can be added to the middle of the meatloaf and final sprinkling on top if desired. We always omit the salt and I usually never measure ingredients so these are estimates on the spices. Adjust to your taste. Have done these in the crock pot and the presentation is always appealing and they turn out well. Bon appetit Italiano, as we call it! :D

I used Martha Tompkins Better Homes & Gardens recipe for years and years except I didn't use sausage, I used poultry seasoning instead of just sage, and I didn't make the sauce.
It's really a good meatloaf.
Then my sister gave me this recipe which I like better:
1/2# ground beef
1/2# ground pork
1/2# ground veal
(With the price of ground veal lately, I've been using 1# ground beef with the pork and am just as satisfied.!
1 medium onion, chopped
2 cloves garlic, minced
2 large eggs, beaten
2 tsp. Worchestershire Sauce
Salt & Pepper
1/2 c. milk
2/3 c. dry cracker crumbs OR 1 1/3 c. FRESH bread crumbs
2 Tbls. chopped fresh parsley
2 tsp. mustard
Saute onion until softened. Add garlic. Saute for about 1 minute - don't let it brown. Cool slightly.
Combine all ingredients and mix until it doesn't stick to the bowl. If it sticks to bowl after being well mixed, add a little more milk until it doesn't stick anymore.
Line a baking sheet or shallow roasting pan with foil. With wet hands, shape meat into a loaf.
Bake @ 350 degrees about 1 hour. Let stand about 15 minutes to retain all the juices.
The original recipe called for wrapping the loaf with slices of raw bacon before baking, but I don't bother. The meatloaf is tender and juicy and very tasty without the bacon fat and flavor. And it get nice and brown.
You can top it with ketchup or BBQ sauce, if you lilke.
Most of the time, I put peeled quartered potatoes to roast alongside the meat in the same pan. YUM

2 lbs. hamburger
about 2 - 3 cups crushed tortilla chips
1/2 cup salsa (I use the mild)
1 egg
Mix together, put in loaf pan and spread some taco sauce on top. Bake until done. I also drain any liquid while the loaf is baking, keeps it from getting soggy. Enjoy!!
