One of my favorites is Cornmeal Cookies

    3/4 c margarine 3/4 c sugar
    1 egg 1 1/2 c flour
1/2 c corn meal 1 tsp baking powder
    pinch salt 1 tsp vanilla
    1/2 c raisins (optional)

Cream shortening and sugar; add egg. Beat until creamy. Sift flour, corn meal, baking powder and salt; add to creamy mixture. Add vanilla and raisins. Mix together. Make into balls about the size of a walnut. Put on cookie sheet and
press with fork that has been dipped in sugar.
Bake at 350 degrees about 10 min.
