    Lunch is served.. Jalepeno Pineapple Chicken.. served it on a bed of bibb lettuce, with a ginger/garlic vinagrette.. it was good.. Leftovers for a snack tonight will be rolled on a flour tortilla with some mango - peach salsa I made the other day...

    Look delicious, but sorry, I don't like hot peppers (or hot spicy food in general), ginger or flour tortillas. But I like the chicken part, the pineapple part, and the peach salsa part (unless it's spicy). I bet this dish just as you've prepared it would be good with the addition of cooked rice. Rice salads are delicious.

    What are you having tomorrow?

    Actually , it was not as spicy as I thought it would be.. funny thing was, I added another jalepeno because it was TOO bland.. And yes, it would be very good with rice, brown, fried, or white.. I love rice salads, as well.

    I really love a salad called Frog Eyed Salad, which uses a tiny pasta called acini de pepe, which is very silmilar to orzo.. this recipe called for it as well, but I wamted a salad with the warmed chicken/pineapple..

    Tomrorow, thinking since I need to thaw some meat, will do beef short ribs in a tomato/red wine gravy.. maybe..

    Now the short ribs sound right up my alley (but I wouldn't have used the tomato - don't like them either - I would have gone with a beef stock).

    I had a pan-roasted game hen. Turned out great, and it made a really tasty gravy, too.
