Lunch?
Interesting "fusion" lunch today: bacon/lettuce/tomato salad with feta, and ranch dressing; and Thai coconut curry chicken soup. At home.
Soup is from Kroger, so yummy!

I had steel cut oats... 1/2 cup oats, added some water, stirred, put in m/w for 3 mins...added some mixed nuts, one of those snack fruit cups (pears), few raisins and half chopped apple. Added some skim milk to make it creamy. Have one of these every other day.
Jan, it might be fun to start a daily thread about our lunch menus. I am always looking for quick and nutritious lunch ideas. I am not always here in the morns but would chime in during the late afternoons.
Edited to add....I drain off the sugary liquid from the fruit cup but you could leave it.

We don't do lunch as such. DH retired and our eating times have changed dramatically. No breakfast, lunch, and dinner time anymore. We now eat when we get hungry. Breakfast may be at 5 am or 10 am. Sometimes lunch is 4 pm. Dinner is usually a late evening bowl of ice cream. LOL We are both too busy to have set meal times. I love retirement.
