    Default Mashed Potato Souffle With Cheese & Bacon

    I know, I know...this recipe is soooooo not vegan and I can't honestly say that it's even the least bit healthy. (I'm thinking, "heart attack casserole.") However, my son has been coming to our house to stay 3-4 days a week to work on a construction project with my husband. He really doesn't like vegan food and he's super hungry when he gets home from work, so I"m gonna make it for him. It has lots of swiss cheese and crunchy bacon in it and we just harvested some russet potatoes, so it's perfect! I'm sure, like nachos at a ballgame, it will taste delicious.

    Looks pretty enticing to moi!!!!

    A good one to score brownie points towards building your new She Shed and lap pool!!!

    FWIW, I never hesitate about recipes from Country Living and/or Taste of Home (same people).
    Many of my best and most favourite recipes came from these sources.

    Just copied and saved the recipe. I am a potato loving gal, so this would be a dangerous recipe for me to make for just myself. But it would make a terrific potluck dish when we can safely return to eating with a group of friends! Thanks for feeding my yen for potatoes. More options are always welcome! Tee-Hee-Hee
