    Default Mint Cookies

I make these every St Patrick’s Day.

1.5 boxes Andes mints (in candy aisle, remove foil wrappers & set aside)

Combine in large saucepan and melt:
    3/4 cup butter
    2 Tblsp. water
    1.5 cups brown sugar
    12 oz. pkg. chocolate chips

Cool 10 minutes or so, then add
    2 beaten eggs
    1.25 tsp. baking soda
2.5 (at least) cups all purpose flour
    1/2 tsp. salt

Chill dough then roll in small balls. Line baking sheets with foil. (don’t skip this). Bake 350 for 9-10 minutes depending on your oven. Remove from oven, place an Andes mints on top of each cookie. Return to oven 30 seconds, remove and spread mints out with a knife.

Tranum .... You "got" me at mint, and then totally had me in when I saw chocolate!

When you put them back in the oven ... is the oven still on?
Or turn it off when you take the cookies out after baking?

    THANKS!! mmmmmmmmmmm!

Would parchment paper work instead of aluminum foil?

    Those sound so yummy!
I just treated myself to Girl Scout Thin Mints. I have to have them every year!

    Shouldn't be an issue.
I interchange the two all the time, as I prefer parchment by far!
Though I do find a huge difference between brands, and learned my lessons.
So now I make sure to stick with my preferred brand.

Yummy! I completely missed St. Paddy's Day this year and I'm Irish. Oh well...mint cookies sound very nice in the springtime when everything tastes so fresh. I'll have to try them...thanks!

These sound yummy! I might give them a try.

Just FYI, See's sells Irish Cream Chocolates for a limited time in March. DH and I got the last 5 at our local See's Candy shop.
