    THANK YOU!!!! My family loves muffins but I don't buy them, they are too expensive but now I can try making them.

    also when I go to town want to buy some smaller muffin pans

    I have 3 different sizes of muffin pans that never get used.

    I posted this on another topic. Doh!

    I make what my daughter used to call "Good for you" muffins.
    They are chewy and dense and bear no relation to the muffins you buy in a store or bakery:

    1 1/4 c flour
    1 1/4 c oatmeal
    1 tsp baking soda
    1 tsp baking powder
    pinch of salt
    pinch of clove and fresh nutmeg

    1 cup applesauce
    1 egg
    t TBSP oil
    1/2 c skim milk
    1/2 c brown sugar
    2 tsp vanilla

    1 cup or so roughly chopped fresh cranberries (I buy cranberries in bulk in the fall and winter and freeze them)
    1/2 cup roughly chopped walnuts
    zest of one orange. (sometimes I chop up the peel of a clementine or two.)

    Mix dry ingredients, add the walnuts to the dry mix.
    Mix wet ingredients well in a smaller bowl- add orange zest. Mix wet ingredients into dry. Add cranberries at the end.

    1/2 cup or so into well greased muffin tin (or lined)
    Bake at 375 for about 20 minutes, or until toothpick comes out clean.

    These are low fat and high in oatmeal, which means they stick with you. My husband takes these on strenuous gigs, as they are good energy sources. Mmmmm.

    (I don't use a written recipe, so the amounts on the cranberries/walnuts/orange zest are guesstimates.)
