    Broccoli Casserole. I got the recipe from a High School Cook Book from a nun that bought it to a pot luck dinner at our church when my son was in grade school, about 25 years ago. Everybody loves it, and asks I make it for every holiday. It is absolutely the best.

    This isn't really a side dish but I know if I don't show up with a ton of toll house cookies for munching during the prep I'm in trouble.

    I made this for the first time last year, and now my family says this will be the new family favorite - no more candied yams!

    There are 2, one is the cranberry orange relish made with jello, apples, orange, walnuts etc. and the second is one I found about 3 years ago. Roasted root vegetables, I use carrots, parsnips, beets, potatoes and turnips. The veggies are parboiled, then roasted with just a little salt, pepper, and olive oil till tender. It can be done day before and reheated in oven or microwave, and it is just as good 2nd day. Just dont dry the veggies out too much.

    My husband calls this English Pea Salad. I made this just this past week. I also like to chop up a little bit of lettuce and add to it.

    Am I the only one that thinks a proper Thanksgiving dinner MUST include rutabaga??? Must be my Scandinavian blood!

    Here's the recipe for my favorite veggie casserole ever!

    Muzzy Casserole

    16 oz. frozen broccoli, cauliflower, carrots (sometimes called California blend)
    4 oz. (1 cup) shredded mild cheddar cheese
    1 cup "lite" mayonnaise
    1 cup chopped celery
    1 medium onion, finely chopped
    1/2 cup melted margarine
    1 sleeve,buttery round crackers, coarsely chopped (about 35

    Cook veggies according to the package directions and place in a greased casserole. Combine cheese, mayo, celery and onion and spread over veggies. Combine melted margarine and crushed crackers and sprinkle over top. Bake at 350 degrees for 30 minutes. Serves 6 to 8. Doubles well.
