    Shredded Wheat Bread
    Best of Country Breads

    The recipe for this low-fat bread came from my grandmother. It's now my husband's favorite. Nothing makes the house smell better than the aroma of molasses as this bread bakes.

    SERVINGS: 32

    CATEGORY: Breads

    METHOD: Baked

    TIME: Prep: 20 min. + rising Bake: 30 min. + cooling

    Ingredients:
    2 cups boiling water
    1 cup crushed Shredded Wheat cereal
    1/2 cup molasses
    2 tablespoons shortening
    1-1/2 teaspoons salt
    1 package (1/4 ounce) active dry yeast
    1/4 cup warm water (110° to 115°)
    5-1/2 to 6-1/2 cups all-purpose flour
    Melted butter, optional
    Directions:
    In a large bowl, pour boiling water over cereal. Add the molasses, shortening and salt. Let stand until mixture cools to 110°-115°, stirring occasionally.
    In a bowl, dissolve yeast in warm water. Add cereal mixture and 3 cups flour. Beat until smooth. Stir in enough remaining flour to form a soft dough (dough will be sticky).
    Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour.
    Punch dough down. Turn onto a lightly floured surface; divide in half. Shape into loaves. Place in two greased 9-in. x 5-in. loaf pans. Cover and let rise until doubled, about 1 hour.
    Bake at 375° for 30-35 minutes or until golden brown. Remove from pans to wire racks. Brush with melted butter if desired. Cool. Yield: 2 loaves (16 slices each).

    These are in the frig right now.......waiting to be topped and baked tomorrow. I made a double batch. I have part of a batch in a smaller casserole type dish for a friend to try. She is going to be w/her DH's family and they won't try anything if someone outside the family makes it so she's going to claim to compliments! I did tell her one sister-in-law that it would be there and she just has to try it! I can't wait till tomorrow just for these!! YUM! If you've never tried them do yourself a favor and make them ASAP!

    The Bestest Sweet Potato Casserole Ever!

    3 cups mashed, cooked sweet potatoes (if you don't want to boil fresh, get one large can..the big one and one normal sized can and that will equal approximately three cups mashed)
    1 cup sugar
    1/2 cup melted butter
    2 eggs, well beaten
    1 tsp vanilla
    1/3 cup milk
    1/4 tsp nutmeg
    1/4 tsp cinnamon
    Combine all ingredients and spoon into casserole. Cover with topping:
    Topping:
    2 cups Rice Krispies
    1 cup chopped pecans
    1 cup brown sugar
    1 stick butter, melted
    Mix all ingredients and spoon over casserole.
    Bake casserole 30 min at 400 degrees. Topping will be browned.

    My husband loves this stuff. I leave out the poppy seeds though for him.....don't need anyone testing positive for anything on drug tests....

    Poppy Seed Chicken

    4 C. Chicken Breasts, cooked 16 oz Sour Cream 2 Reg. Size Cans Crm Mush. Soup 8 oz Shredded Cheddar Cheese 1 SleeveRitz Crackers 1 Stick Butter1-2 tsp. Poppy Seeds (optional) Spray bottom of casserole dish. Shred Chicken and put into casserole dish. In a bowl mix together the sour cream, soup and poppy seeds. Sprinkle cheese over chicken. Cover with soup mix. Top with crushed crackers and pour melted butter over crackers. Bake at 350* for about 25-30 minutes.

    Hashbrown Casserole



    30 oz Hashbrowns frozen

    8 oz Sour Cream

    1 large can Cream of Chicken Soup

    1 (2 cup) package Cheddar Cheese Shredded

    1 1/2 sticks butter

    Cornflakes


    Mix cheese, sour cream and soup together in a bowl. Put hashbrowns in casserole dish, spread mix over the top. Pour melted butter on top then sprinkle with cornflakes. Bake at 350* for 30-45 minutes.

    These are the best beans ever!! We love them!

    Depo’s Favorite Baked Beans:

    2 cans pork n beans (soup can size)
    1 cup brown sugar (used a little less)
    1/2 cup catsup
    1/2 cup Coca Cola (have used Pibb in a pinch)
    1 small onion, diced
    2 tsp. dry mustard
    2 strips bacon, cut into 1 in. pieces

    Mix the beans, brown sugar, catsup, Coca Cola, onion and dry mustard and place in a casserole dish. Dot with the bacon. Bake at 300 for 1-1/2 to 2 hrs.

    Kids really love this!


    CROCKPOT PIZZA


    1-1/2 lb. hamburger
    2/3 package cooked rigatoni
    2 can pizza sauce
    2 large bags mozzarella cheese
    1 package pepperoni

    (Cook meat and drain. Cook noodles and drain)
    Layer ingredients in crockpot. Cook low for 5 hours.

    I do the noodles on the bottom, then ground beef, sauce, cheese and pepperoni on top.

    Awesome chicken!


    Melt in Your Mouth Chicken

    1- 3lb. chicken (boil until tender)(I used 2 boneless skinless breasts and 4 boneless skinless thighs)
    1 can cream of chicken soup (I used Campbell’s Cream of Chicken and Mushroom.)
    2 cups chicken broth
    1 stick melted margarine
    1 cup buttermilk (1 cup milk, 1 tablespoon lemon juice; let sit for 5 minutes, mix well)
    1 cup self rising flour
    1 tsp. salt
    1/2 tsp. pepper

    Cube chicken and place in greased casserole dish. Combine the cream of chicken soup and the chicken broth, heat until soup is incorporated, and pour over chicken. Combine margarine, buttermilk, flour, salt and pepper; pour over above to make crust.

    Bake at 425 for 30 minutes.

    The Best Broccoli Salad

    2 bunches of broccoli (use tips only and cut to bite size)
    1 small onion chopped fine
    1 cup grated cheddar cheese (grate you own if possible it's so much better)
    1/2 cup raisens (sometimes I use golden just depends on what I have)
    1/4 cup bacon bits (I use a pound of real bacon fired crisp and cumbled)
    1/2 cup chopped pecans (toast them first and I use a few more)
    1/2 cup sunflower seeds (don't use much more than this or it tends to overwhelm the salad)
    Combine all in medium bowl.

    Dressing (Can do 1 1/2 of this if you like more dressing, I usually do)

    1/4 cup sugar
    1/4 cup red wine vinegar
    1 cup mayo

    Combine all in small bowl. Mix well, wil be lumpy. Pour over other ingredients and mix well.
    Best if stands overnight before serving

    Louisiana Apple Dumplings

    2 Granny Smith apples
    3/4 c. butter (do not substitute)
    1 1/2 c. sugar
    1 tsp. vanilla
    1 tsp. cinnamon
    2 cans refrigerated crescent rolls
    1 1/4 c. Mountain Dew (could use Sprite for a different flavor or diet Mt. Dew or diet Sprite)

    Peel and cut each apple into 8 slices. Microwave them for 1 minute. Melt butter and mix with sugar, vanilla and cinnamon. Roll each slice of apple in a crescent roll and place in a greased 9x13 pan. Spoon the sugar mixture on top of each dumpling. Pour the Mountain Dew over and around each dumpling. Bake at 350 degrees for about 30 minutes or until dumplings are golden brown. Serve with ice cream while warm.

    This is really good too.


    FRITO PIE

    1 (15 oz.) can chili, no beans (Can make your own chili)
    1 (15 oz.) can chili with beans
    3/4 c. water
    2/3 of a 12 oz. pkg. Fritos original corn chips
    1 c. chopped onion
    3/4 lb. cheddar cheese, grated
    1 (8 oz.) carton sour cream (opt.)

    Preheat oven to 350 degrees.
    Spray 1 1/2 to 2 quart casserole with Pam.
    In saucepan, combine both
    cans of chili and water; heat to boiling, stirring occasionally.
    Place 1/2 of the corn chips in bottom of prepared casserole.
    Cover with half the chili mixture. Sprinkle with 1/2 cup onion and half the grated cheese.
    Repeat layers, ending with grated cheese.
    Bake for 25 minutes or until heated through.
    Serves 4 to 6.

    TIP: After wedges of pie are cut, top each with a tablespoon of sour
    cream. An excellent main course on a cold day.
