    Love casseroles that are easy to make. Going to keep this one = my husband and I love Mexican food. Thanks for sharing.

    What would you use in place of mushroom soup? My husband hates mushroom soup and mushrooms.

    Not real sure, since I haven't tried it, but I'd probably sub. cream of celery. Actually, I don't think he would notice the mushroom. The chili beans and Rotel tomato is what you taste. For the beans, you can use any variety of chili beans, mild, hot, or hot and spicey..
