My Miso Making Update
My yearly batch of homemade miso is coming along very nicely. I had to skim off some mold from the top liquid the other day. It's totally normal and won't affect the miso, which is weight down, several inches below the liquid. It smells heavenly and looks really good. I should take some pix for y'all.
My vinegars are also doing good. I keep them on a shelf above the refrigerator. They just sit there aging and getting better and better. It's almost time to make more.
