Look under search for Rotoni salad. It is quick and easy and it has brocolli and green colored rotoni in it,plus bell peppers. It is really good.Everyone liked it when I made it and they even wanted the recipe to take home.

When what you are to bring to a meal is ASSIGNED, it's NOT a Potluck Dinner. Over the years, when we attended these type of 'events', I took whatever I wanted to cook. If they didn't like it, they didn't have to eat it. I can't remember any one every complaining about it.

I think the assigned idea is not so bad, that way you have plenty of variety and not all of something say desserts. Its still potluck just in a more organized way. Thats how we do it in our family, some of us are better bakers and some of us are better at something else we just ask each to bring something in a certain category

Ok I know you said no salad, this is kind of a salad, but maybe it will work. Take all the fresh vege's that you like especially the green ones, wash them, but them into big bite size pieces, put them in a big bowl, put in a jar of your favorite italian dressing let marinade overnight and bring with you in the morning.
You could also do a spinache dip, cheat and buy those little frozen spinache quiches, Broccolli and cheese cassarole with cracker crumbs on top or make a mac & cheese and put green veges in it. Good luck.

How about stuffed green peppers? They are even better reheated the next day and who cares if it is also a main dish - it's a green vegetable!
You could also do Haluski - buttered green cabbage and noodles - YUM.
Split pea soup?
I bet there will be lots of green beans and/or broccali dishes - maybe too many!
Why does it have to be specifically GREEN veggies? That doesn't really give you that much to work with. And no salads? How limiting is that? Who thought this up?
Good luck! Let us know what you decided on.

Something with Asparagus????
Grill it ahead of time, brush with Olive Oil and sprinkle on a little granulated garlic, fresh ground pepper and fresh ground salt before grilling. Warm up right before serving.

maybe you could combine your skills--i make spinach pie. i use prepared crusts (because i'm all about getting it done quickly!) for two pies, you'll need two crusts (of course!) one large bag of frozen spinach, 4-5 eggs, depending on the size of pie crust, a little onion if you like it, some garlic (i use the freeze dried roasted garlic), about a teaspoon of salt, pepper to taste, a pinch of cayenne, a splash of milk, and a large bag of shredded swiss cheese. thaw the spinach, and squeeze out the liquid. put in a large mixing bowl, and add the other ingredients. mix well, and spoon into the pie shells--bake at 350 for approximately an hour--cover the edges of the crust with foil if they start to brown too quickly--you can top it with a buttery bread crumb mixture if you like, before baking--my family just likes the cheesy spinach straight up. it's not as eggy as a quiche, and you can vary the ingredients to your own taste. (i've used a pinch of nutmeg instead of the cayenne, instead, and the youngest kid likes that kind better) i've added a few tablespoons of crumbled cooked bacon, as well. play with it--it's best right out of the oven--but it reheats in the microwave without losing any taste. (i tote it to work cold, for lunch, too)
good luck--i hope you find the right recipe for your needs!
