    How about cream spinach. Real simple and delishous. One package of frozen spinach and 1 can of cream of celery soup. Cook and drain spinach; add cream of celery soup- heat and then serve.

    Half the time, I bring a huge batch of "threatened" green beans (somewhere between crunch and soft), tossed with butter-sauteed minced onions (just until edges get slightly caramelized) and "confetti" of (uncooked) finely diced orange bell pepper, red bell pepper and/or yellow bell pepper - just a little salt and pepper. I make a LOT for pot lucks and I never go home with leftovers. The other half of the time, I bring a batch of carrots drizzled with dill-and-shallot butter.

    Chop fresh spinach, mix with with grated cheese (any kind you love). Place in buttered oven safe dish and bake 30 minutes on 350. Sprinkle more cheese on top while still hot. Simple and satisfying. Even good when it cools. Wonderful with chicken.

    This is sooooo cute! I'm afraid somebody would complain that it was reallly a salad, though.....but I'll make this for my gradnsons for Christmas dinner!
    What a GREAT idea for the grandkids, they'll love it and if there are any leftovers, they can go into the turkey soup pot the next day- well, most of the veggies, probably not the hot peppers LOL

    Parboil 2 pounds fresh green beans
    Drain
    Place in 9" X 13" cake pan
    Drizzle 2 tablespoons olive oil over top
    Stir in 1 package Good Seasonings dry Itilian salad mix
    Bake at 350 for 20 minutes
    Remove from oven and sprinkle 2 tablespoons Parmesan cheese over top.

    When we need a simple green vegetable that isn't quite a salad, but isn't a hot dish either, we take 2 to 3 cans of french-cut green beans, drain well. Make one package of Good Seasons Italian dry mix salad dressing with apple cider vinegar & Extra Virgin Olive Oil. Let salad dressing sit & mellow for several hours, shaking every hour or so. Add salad dressing to the green beans, & mix well. Let beans marinate for several hours, stirring often. Serve chilled.
