    Default Need a main dish casserole recipe

    I am planning to have some friends over for dinner. The problem is...one won't eat onions, one is allergic to pork, and one won't eat chicken. So I guess that leaves beef. Any suggestions would be appreciated!

    Lasagne without onions? Will the onion person eat garlic?

    Tuna Casserole

    What about a big pot of vegetarian chili?

    Beef stroganoff?

    Cabbage rolls?

    My step daughter and her hubby always had issues with everything. I finally just got a rotiserrie chicken from Costco added sides and everyone was happy. Make spaghetti or have everyone bring their favorite dish and just add sides

    How about a veggie strata and salad. I watch Barefoot Contessa and she never makes big meals for company. make one thing the focus and add a simple side.

    Baked Spaghetti
    Ingredients:
    1 cup onion, chopped (omit for company)
    1 cup green pepper, chopped
    2 t. minced garlic
    1 lb. ground beef
    1 (16 0z.) diced tomatoes, with liquid
    1 (8 0z.) mushroom, drained & diced
    1 teaspoon oregano
    16 oz. spaghetti cooked & drained
    2 cup shredded mild cheddar cheese
    1/4 cup water
    1 can (10.5 oz.) cream of mushroom soup ( I use two cans for a creamier casserole)
    1/4 cup grated parmesan cheese

    Instructions:
    In large skillet sauté onion, green pepper, ground beef and garlic. Add tomatoes, mushrooms & oregano.
    Simmer uncovered for 10 min.
    Place half of the spaghetti in greased 9 x 13 pan
    Top with half of meat mixture
    Sprinkle 1 cup cheese.
    Repeat
    Mix soup & water until smooth, pour over casserole.
    Sprinkle with parmesan cheese
    Bake uncovered 350 30 - 35 min
    Let set 10 min.
    This casserole can be made up ahead of time, store in refrigerator and increase baking time by 15 minutes. Leftovers are tasty too.

    Big dish of goulash. We just macaroni (any pasta) ground beef and tomatoey sauce. Or big pot of sloppy joes and they can add their own toppings like grated cheese and onions and mushrooms. We love sloppy joes with fresh mushrooms and chopped onions. Couple sides like cole slaw or salad, chips.

    I usually have friends over for a taco bar dinner, it's not a casserole but so simple. I cook the beef and/or chicken, heat up a big can of refried beans and chop up some toppings. Buy premade taco shells or use flour tortillas, wrap them in aluminum foil and warm them in the oven. Main meal and sides all in one, then add a cake or something for dessert.
