    Oreo truffles

    Crush small pack of oreos in blender or food processor. Then mix well with softened pack of cream cheese. Roll into small balls and chill. Next, melt chocolate chips or white almond bark. Dip the oreo balls in melted mixture and let cool on wax paper.

    This was in a little book the teacher gave us in the 8th grade.

    SAUCEPAN CHCOLATE COCONUT BARS



    1 STICK (½ CUP) MARGARINE
    1/3 CUP GRANULATED SUGAR
    1/3 CUP PACKED BROWN SUGAR
    2 TABLESPOONS WATER
    1 CUP SIFTED FLOUR
    1 ¼ TEASPOONS BAKING POWDER
    1 EGG
    1 TEASPOON VANILLA
    ½ CUP CHOPPED NUTS
    ½ CUP SHREDDED COCONUT
    6 OUNCE PACKAGE OF SEMI-SWEET CHOCOLATE PIECES


    Melt margarine in a saucepan. Remove from heat. Add sugars and water. Blend. Stir in flour and baking powder. Add egg and vanilla. Beat well. Add nuts, coconut, and chocolate pieces, and stir lightly to combine. Pour into pan, rubbed with margarine. Bake in a moderate oven (350’ F.) about 30 minutes. Do not over bake. Cool in pan. Cut into bars at serving time.



    In the 8th grade, I was given an A+ by unanimous vote of the other girls in our home economics class. When Mrs. Wilder told me, I felt wonderful. Unfortunately, at the time, I still believed that I was allergic to chocolate and I did not get to taste them myself.

    This is one of my fav desserts. Very easy. Very rich, serve small slivers.

    Strike It Rich Pie

    1 c. flaked coconut
    1 c.(6oz) choc chips
    1 c. chopped nuts
    2/3 c. lt corn syrup
    1/2 c. gran sugar
    1/2 c. brown sugar,packed
    2 Tbsp butter,melted
    4 eggs
    unbaked pie crust

    Preheat oven 350* In med bowl mix coconut, chips,and
    pecans; sprinkle over bottom of crust. Combine syrup,
    sugars, butter,and eggs till well blended. Pour over
    coconut mixture. Bake 50-55 min till puffed and set.

    Great. Just Great. I finally decided I'm going to STOP eating sweets and lose a few pounds and now you all have to submit these recipes! Well, maybe I could start dieting on Monday...........

    Heath Bars (munchy and crunchy good)

    2 c. flour
    1 c. butter, divided
    1.5 c. brown sugar, divided
    1 c. pecans, chopped
    1 (16 oz.) pkg. semisweet choc. chips

    1) Preheat oven to 350 degrees. Mix flour, 1/3 c. butter and 1 c. brown
    sugar until fine. Spread mixture into 9x13 inch pan. Cover with pecans.

    2) In small saucepan, combine 2/3 c. butter and 1/2 c. brown sugar. Cook
    over medium heat, stirring constantly until entire surface boils 1/2 - 1 min.
    Spread over nuts. Bake 18-22 min.

    3) Remove from oven. Immediately sprinkle choc. chips over top; spread
    evenly. Cool. Cut into bars. Yields 32 bars. :D

    Chocolate Chip Coffee Cake--

    1/2 c. milk
    1/2 c. margarine
    1/3 c. sugar
    1 t. salt
    2 pkgs. dry yeast
    3c. flour
    1/2c.water
    2 eggs, beaten
    1/2c. choc. chips
    nuts, optional
    Scald the milk, and add the next 2 ingredients. Sprinkle yeast into the water and add salt. Add cooled milk mixture, eggs, and 3 c. flour. Beat.
    Mix together and sprinkle on top of the cake, the following mixture. Let stand about 1 hr. to raise.
    Sprinkle with the following topping:
    1/3 c. margarine
    1/4 c. sugar
    1 t. cinnamon
    1/3 c. flour
    1/4 c. choc. chips

    Bake 400 for 35 min, then turn out of the pan when cooled.
    Serves 8-10.
    This recipe is from an old newspaper which my husband's parents sent to us every year. I just tried it one day, and our kids loved it!
    The choc. chips melt in the cake and it is delicious.
    ***Be very sure the milk has cooled before combining with the yeast mixture.
    ***It says to add salt, but I don't, as with my luck, the milk will curdle!!
    ***It has to be baked in a tube pan. I baked it once in a long pan, and it wasn't nearly as good.

    Check out my Peanut Butter Bars. It uses melted choc chips on top and it tastes like a Reese's Pieces bar.

    I also love to put choc chips in peanut butter cookie dough. They are terrific!! I don't use the fork to smash them down like you do for peanut butter cookies. They are one of my favorites!

    Chocolate chip pancakes are yummy!! Just throw in a handful or more choc chips into the batter.

    The other day I made them for my grandson and I went to add more pancake flour to the existing batter to make more batter. I already had choc chips in the batter. I added hotwater to the mix to mix in the fresh flour and it melted the choc chips. I added a few more chips and we had chocolate -choc chip pancakes!! Jake loved them!!
