Need Recipes For Pumpkins, No Eggs
I have a bumper crop of pumpkins, but alas, my chickens are molting, so there's no eggs for pumpkin pie, cakes, etc. Anyone have any other suggestions on what to make with all these pumpkins?

when I do weight watchers I steam them down and count them a veg
We are building a new chicken house, next to the old one, and my little girls are molting like mad, more than I've even seen them do before. I think it is all the pounding. They will get happy when they see their new home! I want to take a chair and cuppa tea down and enjoy their view of the forest with a little stitching on the side.
Have you make pumpkin milk shakes?

You can make a pumpkin cake w/o eggs. I'd so it flat, not layers. I have a post depression cookbook with recipes without eggs. The baking powder will help it rise, the pumpkin will keep it moist, so all is good. I also like pumpkin soup. I've accidentally left the eggs out of pumpkin cookies and they were okay.

Pumpkins are like squash, I would look for some cream pumpkin soup recipes. You might try roasting some for a vegetable. Peel and cut up for freezer bags for when you do have eggs for pies and cakes.

Turkey Tuscan Soup. One of our favorites. It calls for canned pumpkin, but I'm sure you can figure it out.

We also love using pumpkin for my husband's favorite bundt cake.
Dark Fudge cake mix
1 can pumpkin
1 cup water.
Mix for 2 -3 minutes with electric mixer, Pour into prepared bundt pan.
Bake 45-50 minutes at 340 degrees.
It remains really moist. So much so, that you can barely cut it.
We like to melt Nutella on it while it's warm, like frosting.

Nice, new chick abode going up there. I love to sit and watch our chickens too. They have such an interesting social structure.
