Need Recipes for Tomato Sauce and Too-Ripe Bananas

I also freeze my bananas when they are getting too ripe to eat, in fact I really only like to use frozen ones to make my banana bread. I use Martha Stewarts recipe. It has sour cream in it, and makes it extremely moist without being gooey. I actually also scrape the inside of the peel, it gives the bread really nice color and brown flecks. Good luck!

Is your canned food problem caused by MSG? I know a few people who have a reaction to that. If so, be aware that even some powered spice mixes have MSG in them.

I freeze my bananas but I also make banana blueberry muffins with them or just a banana bread. Or toss a frozed one sliced in the blender for a smoothie

A great yummy tomato sauces comes from Julia Child- the way I've made it is with canned tomatoes, but I know you could use fresh as well (peeled perhaps?).
I start with olive oil, garlic slices and red pepper flakes (omit both if it's too strong for you) in a pan until the garlic is soft and brown, don't burn the red pepper. Dump tomatoes in with a few sprigs of fresh basil, and let it cook away for about 10 minutes. Use a wooden spoon while it's cooking to crush up some of the tomato. The fresh basil gives enough of the flavor you're looking for without the extras, really simple and delicious. Season with S&P to taste.
As for bananas- definitely freeze them. I also use Martha's banana bread recipe (KBiederman is my sis ;) ), and it is bar none the best banana bread I've ever had/made. I don't know what else to use bananas for because that BB is so delicious!!
