I store my overripe bananas in the freezer until I have enough for a batch of good ole Banana Bread. The skins turn very black, but do not affect the flavor

I freeze my over ripe bananas also. I use them for smoothies. A banana, a single serving yogurt, some
ice cream, and milk. I also add frozen strawberries,
blueberries, or peaches. Blend. We love them for breakfast.

My husband is Sicilian and loves to cook. He always puts a teaspoon or so of sugar in the tomato sauce. It cuts any acidity and improves the flavour.

you can always make banana bread out of them. it only takes 6 bananas for banana bread. and for the sauce just put your sauce on the stove and cook tomatos down untill you get a sauce base and then add what kind of spices you want to put in the sauce. here is a banana bread recipe.

I make banana bread when my bananas start getting too ripe. I also peel, slice, and put them in ziplock bags for smoothies, if I don't have enough for bread. They chop up better in the blender if they are already sliced. Bananas are funny around here. We either eat them right up or they get too ripe.
