    Ok here is my Southwest Chicken Corn Chowder Recipe - we love it

    1 package boneless, skinless chicken breast cut into small bite size pieces
    1 small onion, chopped
    Brown chicken and onion in 2 tablespoons oil until juices run clear
    Add:
    2 cups frozen corn
    1/2 cup chopped green pepper
    1/2 cup chopped sweet red pepper
    1 16 oz jar picante sauce
    1 32 oz can chicken broth
    1/2 bag frozen OreIda hashbrown (cubed)
    Salt & Pepper to taste

    Bring to a boil, then let simmer for approximately 30-45 minutes

    Wisk together 4 tablespoon cornstartch and 4 tablespoons cold water in a bowl then add to the soup, cook until thickened some.

    I serve this with a crusty sourdough bread, my family loves it!

    A friend from work gave me this recipe. I love it; easy and soooo good!
    Boil potatoe chunks, bite-size.
    Add some milk; just use your judgment; don't know how much.
    Chop some Ham, bite size; add pepper.
    Add 1 can Creamed Corn.
    Stir all together and get hot.
    ***This is enough for 2 people; easy to double.
    You really don't need much more with this; maybe a glass of milk and bread and butter. Filling!!
