    Default A new meatloaf recipe

    Cracker Barrel Meatloaf

    I mix everything in my Kitchen Aid mixer

    2# hamburger
    Onion as you like (dice fine)
    1/2 Green Pepper (diced )
    Crushed Ritz crackers (1.5 sleeves) I used generic
    Shredded sharp cheddar cheese. 1/2 cup
    3 eggs
    Milk. 1/2 cup
    Salt. 1/2 tsp
    Black pepper. 1/4 tsp.
    Bake uncovered 350 in a loaf pan for 30 minutes
    Spread on frosting as follows & bake an additional 20-30 minutes uncovered
    Ketchup. 3/4 cup
    Brown sugar. 2 Tblsp
    Mustard. 1 tsp
    (I just replaced my old meatloaf recipe with this - so much better !)

    Sounds wonderful - except for the green pepper!

    Thanks, now I have Cracker Barrel's meatloaf and hashbrown casserole recipes. The hashbrown recipe is for the instant pot though.

    I have used this recipe, from my grandmother, for 50 years, without the eggs. My mom uses this recipe with 1 egg.

    I find that red bell peppers are much easier to digest than green. If I'm making something that needs the color contrast, I use yellow.

    Thanks for the recipe. We had this meatloaf for dinner last night, and DD is taking leftovers for lunch today! To make it lower carb, I left out the crackers. So I also left out milk. And only used ketchup on top.
