New Shrimp Appetizer

I mixed equal parts grated Monterrey Jack cheese and Oaxaca cheese and set aside.
In small cast iron skillet, grilled shrimps (jumbos cut into thirds), mushrooms in butter and spices(garlic, Italian seasoning, cayenne). Remove and let skillet cool slightly before layering 1/2 cheese, shrimp mix, and other 1/2 cheese.
450 for 15-20 min.
Served with garlic bread.
It needs another ingredient--didn't have any scallops, which is what DD suggested! Any input?

I love Mexican cheeses. They're usually a bit cheaper than the standard cheddars, swiss, etc. and the DH and I really love them. I'll buy a Mexican cheese over mozzarella for pizza.
