    Hey Bonnie ever try chocolate peppers? Often green peppers can make you burp for lack of a better word. The chocolate ones seem easier to digest.

    When I reached this point I just took our favorite recipes and adjusted them to make 3 servings, my DH had a hardy appitite. If the recipe made 6 servings I just cut all the ingredients in half. If it made 8 I divided it 1/3. they didn't always come out perfect for exact measurements but I just played with the ingredients a little. Perhaps a slight more veggies or a little more chicken but I was careful on the liquid measurements because I didn't want things to be to liquid or soupy if it was supposed to a thicker sauce. Corn starch is a quick fix for thickening up sauces. Good luck

    Do you freeze them cooked or raw?

    Every summer, we end up with way too many peppers to eat fresh. We make up stuffed peppers and freeze them....very easy to take out just two....or if we are having company, we can take out however many we need.

    plainpat...I freeze them raw. You can either take them out to thaw before cooking, or put them straight into the oven. Obviously, they will need a little longer to cook if not thawed first. They come out almost as nice as fresh. ;)

    Thanks....will try that when peppers are ripe.Looks like you are in the far North. My Sis lives in St Cloud.

    SWEET STUFFED BELL PEPPER SOUP

    Medium onion diced
    Salt & Pepper
    8 oz lean ground beef (at least 90%)
    3 cloves garlic minced
    3 bell peppers chopped (I used 1 each of red, green and yellow)
    1 can stewed tomatoes (14.5 oz)
    1 can diced tomatoes (14.5 oz)
    3 cups beef or chicken broth
    ½ (100g) uncooked brown rice

    Spray a large pot with non-stick cooking spray and heat over medium heat. Add the onion and garlic, sprinkle with salt & pepper and allow them to sweat for a few minutes. Add the ground beef and brown. While the beef is browning, chop the peppers, and puree the stewed tomatoes in the blender. Once the beef is brown, stir in the chopped peppers and the diced tomatoes. Let the flavors mix a bit. Add the pureed stewed tomatoes and chicken broth. Add the rice and crank the heat up to high. Bring everything to a boil then cover and reduce to a simmer. Continue to simmer for about ½ hour. Serve! 190 calories/3 fat/4 fiber
