    Default Pancakes to Crepes

    I frequently have pancake batter left over after making a pile of pancakes for the DH. I usually just throw it out after breakfast because it no longer has an active rising agent in it. But, the other day, I made buckwheat pancakes, our favorites, and buckwheat flour is expensive, so I put the leftover batter in the fridge. This morning, I added a couple of eggs to it and a splash of milk and made crepes with the batter. I filled them with a couple of tablespoons of cream cheese and topped them with berries and a swirl of honey. Delicious! It was like 2 breakfasts for the price of 1! I'm sure that you can do this with most any type of pancake batter.
