This is about the way I make mine, but I've never tried dumplings. Sounds good though. I always add about 1/4 tsp of jar style garlic. Ham hocks are best, but you can also add diced ham pieces from left over ham. I cook most of the day and make sure that all peas are disolved so that the soup is creamy.

1 ham bone (never tried ham hocks but I'm going to)
1 bay leaf
1 onion, 1 carrot, 1 stalk celery- diced
1 lb. split peas
Cook for about 2 hours
Add 2-3 diced potatoes and cook 30 minutes
Add drop dumplings and cook 5 minutes more
Recipe for drop dumplings
6 Tablespoons of flour,1 egg, tiny bit of water to make a thick paste, (consistency should be sticky)
Drop small amounts off of teaspoon into soup.
