3 cups of sugar to every 6 cups of peaches
1 tablespoon of butter
1-2 tablespoons of lemon juice
cinnamon or nutmeg to your taste
Put all ingredients in a large saucepan. Let set about 5 min until juice forms. Cook at medium to medium high until thick, stirring often. Freese in ziplock bags or process in jars. Makes the best peach jam I ever ate. Works great with apricots as well.

Thanks to everyone for for the recipes and ideas as what to do with the peaches.Must have got 3-4 bushell off the tree this year,of course some went to wast as animals got to them in the night. Now we got bushell of pears off the pear tree,Those will all get canned so no problem there.

Buy a graham cracker crust or make your own. Cut up 6-8 cups fresh peaches (depending on size). Put peaches in cooked or prepared graham cracker pie crust. Top with glaze made from 1 cup crushed peaches, 1/2 cup water, 1 cup sugar, 3 T corn starch, bring glaze to boil, cook on low for 2 minutes. Add 1 t almond extract. Pour over peaches. Let cool in fridge 2 hrs before serving. Top with whipped cream if desired.

Never enough peaches of any kind. Glad some of you posted recipes.Thanks for posting this recipe., I have decided to make a QB cook book from quilters here. Looks like quilters here are great cooks as well.
