    i read that if you use cream cheese instead of butter cookies will be soft
    i just made a double batch of choc chip and used half butter and half cream cheese
    they turned out great
    grsons said this is their favorite

    This is my daughters favorite go to. 1C peanut butter, 1 c sugar 1egg, mix drop and bake put a kiss on top when they are done. Turns out great every time. She's not a big baker and for years this was the only thing she'd do.

    Ina Garten (The Barefoot Contessa) has a great peanut butter cookie recipe. She uses chocolate chunks instead of chips, they have better flavor. I've been making them for years and they're very good. The recipe is from the Barefoot Contessa Parties cookbook.

    Tips:

    If you use a dark pan your cookies will brown quicker.
    It's important to rotate the pan half-way through so they'll cook evenly.
    Crisp cookies are due to granulated sugar. Brown sugar creates a chewier version.
    Using room temperature eggs and butter will yield better results.
