    I would imagine the lemon juice is to keep the pears from turning brown like you do with apples.

    Me-thinks some are making pear jam/preserves, whereas
    some are making canned pears, as would be used for a bowl of pears for dessert.

    Wish I had my mom's recipe, we had two pear trees and the pears were hard a rocks. She would grind them up in a meat grinder, then make pear preserves. We called it Pear Honey.

    My mom loved canning pears and also she made pear jam, which I was less fond of. I like canned pears and canned peaches.
