Pimento Cheese Spread - recipe please

I love pimento cheese, but the kind you buy in the store has too many preservatives for me. Also not real cheese, apparently. I am glad to find these recipes. I think I will try this. I bought some mayo made with avocado oil rather than soybean oil, so I can use that.

My mom showed me how. Use 2 cups finely shredded sharp cheddar cheese, 1 jar of diced pimentos and the juice, black pepper, a few dashes of tabasco, then slowly stir in Hellman's mayo until it is moist enough. I never measure the mayo, same with potato salad, I just add small amounts at a time because you can always add more, but you can't take it back out! We love it on crackers or sandwiches, keeps in closed container in fridge a long time.

This all sounds amazing but my oldest daughter created a version that is out of this world! She shreds an 8oz block of extra sharp cheddar and an 8oz block of pepper jack. Hellman's and pimentos to blend a dash of sirachai and it's done!
