Poke Cake
Anyone needing a quick dessert for any occasion, here is one.
1 cake mix--any flavor
1 pkg. Jello-any flavor
Bake cake in long pan--or 2 -9" sqare pan. After cooling, poke holes in the cake--try for good-sized holes.
Combine Jello in water--just hot water...
Pour over the cake and let it soak into the cake.
Top with Cool Whip. You can make ahead and freeze
Enjoy!

Definitely a "throw back" recipe and a good one...but since my kids are now 31 and 28, I haven't had the occasion to make one. : ) Maybe when the grandkids get a little older. It would also be a wonderful dessert for Easter or a picnic. Thanks for the reminder.

I have made several varieties of this cake. One that is a coconut lovers delight is
Bake a yellow cake mix in a 8 x 14 pan (size???)
Poke holes in it while it is hot
Pour Pina Colada canned mix into the holes. (might want to warm it slightly by sitting it in hot water before opening)
Either mix shredded coconut into Cool Whip and spread on top, or top with Cool Whip and then sprinkle toasted or regular shredded coconut on top.
This is really delicious and very rich, although it tastes light.
