I have seen a recipe for a chocolate cake with grated beets. You can make grated beets and a bit of horseradish to serve with ham or pork. There is beet soup, borsch (sp)

I use them to make chocolate beet cake. No flavor of beets, but so moist, you won't believe it! There are lots of recipes out there and I've tried several.

Love just plain ol' beets cooked, peeled and eat with lots of butter. Then, there is no such thing as too many pickled beets, I can eat them in preference to candy. Have you looked in the produce dept. and seen how much they want for thre or four pitiful beets? Oh, my, makes me want to cry.

Yrs ago made a beet Jelly, yes you heard me right and it was down right good. But it was so many yrs ago I don't remember how I did it. Has a nice taste and color is great.

I love, love, LOVE beets. My favorite is a cold beet salad. Start out by removing the greens and the little root stems, then scrub the beets and wrap in tin foil. Bake until easily pierced with fork, then cool. While the beets are baking, put 1 cup of olive oil in a small pan. Add 1 cup of slivered almonds and heat the oil gently, until the almonds just turn a golden brown. Drain off the oil (but keep it - makes awesome dressings)and set the almonds aside. Peel and cube the cooled beets and put into a bowl. Make a light vinegrette (oil, vinegar, lemon or lime juice, minced shallots - whatever light vinegrette recipe you like) and mix with the cubed beets. When ready to serve crumble goat cheese or blue cheese over the beets, sprinkle with the almonds and enjoy. When I don't have almonds I have used salted sunflower seeds - almost as good and much easier!!

If you have a juicer, there are several recipes that call for them. Good with carrots and apples and celery!

And it takes a lot of beets .... bet you could puree the beets, then freeze in recipe size portions, ready for when you wanted to make the cake! |
