i just use flour. flour each piece and add oil to skillet and put in a cast iron skillet and salt and pepper. and fry them that way. frying time 3 hours i like my chicken done and crispy

I made some real crispy fried chicken yesterday. Flour and seasoning, i like garlic powder, salt, red pepper flakes because I love my chicken hot, teaspoon of baking powder and egg whites only, NO yolk.
Dip your chicken in the egg whites, then into the flour mix. SET aside for 15 minutes, letting the flour get sticky. Dip the chicken back into the egg whites and then into the flour mix. Use at least enough oil to cover half of the chicken. Fry on medium to medium high? Watch you heat so that its not so hot that it burns. Covered for the first 10 to 15 minutes. Remove cover and turn chicken, fry until done. I then have a screen top I use so it wont splatter.

Dip chicken pieces in butter then in crushed saltines.
Place on foil lined cookie sheet and bake until done.
Gosh, I haven't made this since the kids left home!
