Chicken Thighs - Dijon Mustard

Line a baking dish with foil for easy clean up. Oven at 400 degrees 6 boneless skinless thighs salted and peppered and placed in the baking dish 1/2 cup of Dijon Mustard 1/4 cup of maple syrup 1 tablespoon of rice vinegar mixed and poured over the chicken Bake 40 minutes or until thighs reach 165 with a test thermometer I served over rice with some of the gravy. So simple and so tasty |

what is rice vinegar?

It is a mild vinegar, you should be able to find it with the other vinegars. We use it often in our salad dressings.

I have some chicken thighs in the freezer. Think I will try this next week.

Real maple syrup or "pancake" syrup?

Mine was from Trader Joes - nothing fancy - agave syrup would probably work too.
