Besides helping Alzheimer's patients here are some other health benefits of coconut oil. It must be organic, unrefined and preferably virgin coconut oil to gain health benefits from it.

I have been using coconut oil to fry in for about a year now. We love it. Have not used it to bake with. It is supposed to be much better for you than vegetable oil.

I took 2 tbsps a day of organic coconut oil orally and lost 10# in a month.

Coconut oil is great for cooking. It has a high heat index and doesn't flavor the food much.

Didn't work for my brownies....
 
I decided to make a pan of brownies, with a mix, but I had no other oil in my pantry, so I used the coconut oil, same measurement as the box mix called for , and I felt that the brownies were too heavy, not the same light texture at all. Has anyone else tested this for baking and altered the amount ( maybe I missed that comment)?
