My family doesnt like the traditional mac sald that has a sweetness to it. I make mine with macaroni,chopped boiled eggs,minced onion and lots of chopped black olives with mayo.They love the stuff and so does my church dinner folks.

MOM’S MACARONI SALAD:
INGREDIENTS: 1 pkg. small shells 1 med. Red onion, diced 1 sm. Can sliced black olives 1 cup diced, roasted red peppers 4 stalks celery, thinly sliced 4 hard boiled eggs, chopped 2 cups cheddar cheese, finely diced 2 tbsp. yellow mustard 3 or 4 tbsp. Sweet pickle relish 1 and one- half cups light mayonnaise (not Miracle Whip) Seasoned salt and black pepper, to taste DIRECTIONS: Cook shells according to pkg. directions, drain and run cold water over to cool. Put in large bowl. Add all other ingredients and mix well. Cover and refrigerate at least 2 hrs. before serving…..Serves-6-8 |
