Perfect Oven Roast (Beef)
PREHEAT OVEN TO 500 DEGREES.
SEASON ROAST TO YOUR DESIRE. (I use garlic/salt/pepper) PLACE ROAST IN PAN OR GLASS DISH. NO FOIL NEEDED OVER YOUR ROAST. COOK FOR 20 TO 25 MINUTES AT 500 DEGREES. TURN OVEN DOWN TO 200 DEGREE F AT WHICH TIME YOU WILL COOK 20 TO 25 MINUTES PER POUND. LET STAND FOR 15 MINUTES BEFORE CARVING. |

Great minds think alike!
I did this just a few weeks ago. Very pleased. The only mistake I made was putting too much bacon across the roast. It was a top sirlion and thought the bacon would give it some moisture. It was delicious but had to clean the oven from all the bacon splatter.

The roast is perfect every time, but no, I do not get enough drippings to make gravy. You might have to make your favorite beef gravy (can or packaged) on the side.
