I goggled beets and corn salad
There are a lot of variations out there. Basics the same.
Sound like something I would try.

Watergate Salad is sooo yummy. All the kids in the family just call it the "green stuff"! It's a must for all family gatherings.

I know the exact thing your talking about, only I don't know why but we make it ALWAYS at thanksgiving, and if my family is craving it during the rest of the year I will make it. It is delicious!!

I have been reading all these 70's salads, mostly ones with jello, but haven't seen any of you say you ever put sliced bananas in the jello. My mother always put bananas in jello, and then she ate it with mayo on top. I thought that was blah!!! until I tried it, and it tasted great to me.

Tomato Aspic ... here's a recipe that I found online similar to what my Mom made. I know she used tomato juice, and lemon jello, along with chopped celery. I never cared for it ... though maybe with age, I now would? :)

the jello in the can sounds fun but the tomato aspic brings back memories of my grandmother serving it at every darn meal. As I kid I thought it was disgusting. Haven't tried it as an adult, don't think I ever will. I look at aspic like I do library books.....I don't have to read all the books I check out if I can't get into them! I figure as as adult I have earned the right to live an aspic free life...LOL

In the 60s my mom used to do the veggies in lemon or lime jello...and to this day I get the shudders when I think of it. I just couldn't stand the texture combination of the crunchy carrots, celery, cabbage, nuts or whatever combintation she used with the slippery slime of the jello. I well remember sitting one Halloween evening gagging and trying to get that down before I was allowed to trick or treating. I cried and gagged and tried my best, but even washing it down with lots of water didn't work. I like jello with fruit, but not veggies.

Spam in jello.....so funny!!!!

Both of them turned up at every church picnic when I was a kid. I'm glad you posted this thread because I haven't made anything like this in a long time, and it seems perfect for Fourth of July.
