I fry my spinach in a lil olive oil and red wine vinegar with onions and a touch of nutmeg. then add feta cheese.

I love spinach too and use fresh when I make Naan Bread veggie pizza. Use Naan Bread base, cover with spinach, red onions, diced tomatoes, galic, sliced roast red peppers and aptichoke hearts. Sprinkle with a little oilve oil and top with fresh grates Parmesan Cheese. BAke in 400 drgeee oven for 13-17 min. depending on oven.
I also make enchiladas with drained frozen spinach, mexican cheese and diced opnions, s & p. Fill tortillas, place in 9x13 pan, with enchillada sauce under tortillas and over the top. Cover enchiladas with more grated mexican cheese, sliced black olives. Bake at 375 for 20-25 min. until bubbly and cheese is melted. Top with sour cream and sliced green onions. Enjoy! |
This is a great spinach salad:
1 bag baby spinach 2 cups sliced mushrooms 1 small red onion sliced 1 can mandarin oranges 10 slices bacon, cooked and crumbled ½ c balsamic vinegar ¼ cup oil 2 Tbls sugar juice of 1 lemon 2 to 3 garlic cloves minced salt and pepper to taste |

sliced tomato mozzarella cheese. Put all in a pie plate with the cheese on top of course. Place in oven until cheese melts and is slightly bubbly. Drizzle on a bit of olive oil and balsamic vinegar add salt & pepper and you have a feast. You will be amazed at how good this is. =) |
