Most days, I microwave a SP for Mom's breakfast with cinnamon, butter, and honey. It's her favorite. But, my favorite SP recipe is Sweet Potato Pecan Pie!

Chunks of peeled sweet potatoes, carrots and parsnips tossed in olive oil and s&p and roasted alongside a head of garlic that is drizzled in oil and wrapped in tin foil. Maybe a few sprigs of rosemary....All is stirred occasionally until tender and browned then dumped in a bowl. (Rosemary removed.) Garlic is squeezed out of head and tossed along with vegies. More s&p as needed. Mmmm....
