    Default Pulled Pork (Instant Pot)

Makes good sandwiches, pork nachos etc. I use this a lot in the summer (so easy)

Mix in large bowl & set aside:
2 Tblsp each - brown sugar, chili powder
1 tsp each - cumin, onion powder, garlic powder, sea salt (or kosher), black ground pepper

4# pork butt, fat trimmed & cut in 4” chunks. Roll in seasoning mixture to evenly coat. Sautée in 2 Tblsps olive oil in instant pot. Turn off & remove meat when browned then place rack in instant pot pan. Pour in 6 to 8 ounces apple juice, replace meat, set manual cook for 60 minutes. When time is done, let natural release work for 15 minutes then quick release. Remove meat and pull apart with forks.

sounds interesting. There was a little shop that made the best pulled pork sandwiches. I have no idea what the recipe was, just that it was very good. There also was another meat shop that would cook up a big pan of porketta and make the best sandwiches. The line would go out the door somedays and when they were out, they were out.
