Pumpkin cookies - MMMM Smells Good In Here

sure thing :)
In a bowl put aside the following
4 cups flour
3 tsp baking powder
2 tsp cinnamon ( I use a generous tsp)
1 tsp salt (I use about a half)
2 tsp vanilla
2tsp milk
In another bowl mix the following
2 Eggs
2 cups pumpkin (a 15oz can)
1 cup oil
2 cups sugar
after mixed slowly add the ingredients from the first bowl. When mixed well, add chocolate chips or cinnamon chips or as I did today, some of each. Stir well. Drop by spoon unto a greased cookie sheet.
I get 5-7 dozen cookies, depending on the size.
Enjoy!

They are very easy to make...I am going to try freezing some. It's only me, DH and my son here. My DH and my son are both diabetic :( (dh is type 2, ds is type 1) so they really don't eat any. Of course they will both sneak one or two over the course of a few days, but there really is no need for all those cookies to be laying around.
Usually when I bake things, I send a large amount to work with DH.
I am having one with my coffee in about one minute :)
