    I just made these for my Extension club meeting at noon...
    OH MY...I did add walnuts and pumpkin pie spice as I love the crunch of nuts in my muffins and I love extra spicy pumpkin!

    These are so light and fluffy! NOW I want to try it with a Spice cake mix!!!


    You'll Only Need:
    1 Yellow Cake Mix (Yes, you can Use a Gluten Free Cake Mix, it WILL work!)
    1 -15oz Can Pumpkin

    Simply dump them into the bowl, mix and put into a sprayed/oiled muffin pan! Bake on 325 for 20-25 minutes! and they FREEZE well!

    This recipe is truly a 2 ingredient recipe. You don't need to add any oil, water, etc. However, you can add the following if you'd like:

    1/2 c. Chopped Walnuts or 1/2 c. Raisins (or a handful of both!)
    1 1/2 tsp Pumpkin Pie Spice

    You can also make the same recipe with chocolate cake mix.

    what about carrot cake mix????

    thinking the spiced cake with walnuts will be just devine....wish I had the ingredients right now..sigh...would love to surprise my parents who are traveling and should be home tonight!
