    A tablespoon of dark molasses per pie also helps

    I always SMELL it. then I add a little more! It's never an exact measure on spices, for me!!

    I prefer carrot pie...that's what I grew up on. Much more flavor than a pumpkin pie, but.....when I make pumpkin (my husband prefers).....use 1 T pumpkin pie spice (per pie-2 if you double the recipe). Ellen

    I think carrot, Pumpkin and sweet potatoe are ar pretty much the same aren't they?

    Yes, I think sweet potatoe is very smooth. I also prefer it over the pumpkin. I never eat the pumpkin. The carrot and the sweet potatoe are very good... :-)
