I don't do these cakes but my oven is not level. I squshed up foil and place it on my oven rack under my sheet cake pan where it slopes...........didn't correct the problem but did improve it.................

I have will share my Pumpkin Roll Recipe It's As Follows
3/4- Cup Self Rising Flour
2- Teaspoons Cinnamon
1- Teaspoons Pumpkin Pie Spice
1/2- Teaspoons Nutmeg
3- Beaten Eggs
1- Cup Sugar
2/3 Cup Pumpkin
Creme Cheese Icing
1- Cup Powdered Sugar
1-8 oz. Creme Cheese Softened
6- Tablespoons Butter Softened
1- Teaspoon Vanilla
1- Cup of Crushed Pecans Or Walnuts
I use Parchment Paper in my Jelly Roll Pan and I still Spray with Cooking Spray
Mix Flour and Spices, Beaten Eggs
Then add Sugar and Pumpkin
Spread this out evenly " I don't add Nuts To the Cake Part Because It Will Cause The Cake To Crack When Rolling It Up
Bake @ 375 * For 15 minutes
Have a Tea Towel Ready Dusted with Powder Sugar Slide the " By Saying Tea Towel It's The Ones That Don't Have Fuzzing Feeling I Buy Mine At Wal-Mart My Last Ones I Brought There,,,,,, Pumpkin Roll out onto this Dusted Towel Remove the Parchment Paper
Roll Up Cake While Hot Laying on the Seam Edge
You can use the same Parchment Paper I just Re Spray I Bake At Least 5 of them That's How Many I get out of a Big Can Of Pumpkin
While they are Cooling I make the Icing
When Completey Cool I Began To Put Icing them
