    Default Quick Rhubarb Dessert

    Spread 3 cups cut up rhubarb in 7 x 11 pan. Sprinkle small 3 oz. box of strawberry or raspberry jello over fruit. put box of DRY Jiffy yellow or white cake mix over top. Sprinkle chopped pecan or walnuts over top of cake mix. Melt stick of oleo or butter and pour over top of nuts. Bake about 45 min at 350 degrees.
    Can also use a mixture of strawberries, rhubarb, raspberries or blackberries and its delicious. I also use sugar free Jello. If you like it very sweet, sprinkle a little sugar over fruit but just the Jello makes it sweet enough.
    You can also make it in 9 x 13 pan--use more fruit and a large size cake mix.

    This sounds soooo good -- wish we still had rhubarb in our garden; so easy to prepare too. Sure sign of spring! Thanks

    Thanks for the recipe. Mom was just talking about rhubard today. I've made this recipe (when living on farm) - and it's wonderful. Don't have rhubarb here, but could beg some from neighbor I'll bet.

    I miss my rhubarb! Had to leave it behind when we moved 3,200 miles, but the rhubarb is flourishing in a friend's garden. She's promised to make something with it when we visit this summer. Can't grow it here and grocery store rhubarb just isn't the same. You are so lucky to have your own.

    yes, SueDor, the only thing wet is the butter that you melt and pour over the dry cake mix and nuts. Think I will go make some right now since I have some cut up rhubarb in the frig. You can also use frozen rhubarb right out of the freezer--just bake it a few minutes longer.

    My favorite rhubarb recipe is to cook rhubarb with sugar until tender. Then drain a big can of mandarin oranges and mix with rhubarb. Cool and serve.
