    I punched enter before I got everything typed so I went back and edited. You must have seen it mid edit.
    Just mix it up and pack it back in the box- no cooking.
    Let it rest in the freezer as long as you can. That's it.
    Oh, don't forget to lick your fingers.

    I too have this recipe. Except I use wax paper its more pliable than foil. I use the box cause its cheap. You dont have to keep it in there all the time. If you want to give as a give you could wrap in plastic wrap after it has set and then in a box. I hate fruit cake but love this one. It taste more like candy than cake. I just put mine in the refrigerator for aday or two until it is set. Then you dont have to thaw and it doest become sticky when you cut it.

    Take one box of 'nilla wafers and crush the cookies thoroughly. I just use the rolling pin and crush them in the wrapper. Add any candied fruit you like along with walnuts, pecans and raisins and flaked coconut. Add one can of sweetened condensed milk, I prefer Eagle Brand. Mix all ingredients thoroughly and press into a loaf pan( I put mine in a 9x12 glass baking dish) Store covered in Refridgerator until ready to serve. Can be made the night before.

    My I share mine with you ladies. This is been in my family for over 60 years and won 2 blue ribbons in two different states.

    Vanilla Wafer Cake

    1 stick of margaine 2 cups sugar
    6 eggs 12 oz. vanilla wafers crushed
    7 oz. of coconut 1 cup chopped pecans
    1 cup of chopped cheries (candie) I use 1/2 of red and 1/2 green

    Cream margarine and sugar until smooth and creamy.
    Add eggs(1 at a time) beating after each addition. Add crushed vanilla wafers, coconut, pecans and chopped cherries.

    Bake in greased and floured tube pan at 275 degrees for 2 hours. Cool on rack upside down.

    This sounds good too - definitely another to try.

    My family likes fruitcake too and I have been making one every year with the same recipe:
    1 box date nut bread mix
    1 pt container red candied cherries
    1 pt container green candied cherries
    1 pt container candied pineapple
    2 cups pecan halves
    Make the bread as directed (I sometimes substitute brandy for the liquid)
    Mix in all the fruits and nuts - this is more of a confection - the batter is to hold the fruit together not to be a "cake" per se.
    Bake 60-75 minutes. I usually make this about a month before Christmas and wrap the cake in brandy soaked cheese cloth, wrap in foil and store in the refrigerator. It will keep for a very long time refrigerated.

    I love fruit cake and eggnog too!
    The best fruit cake I've ever had is one from Assumption Abbey, in Ava MO. www.trappistmonks.com
    I have a recipe for Eggnog Fruit bread- it is a quick bread recipe. I have never made a fruit cake but after I discovered this one it is the one I get. I call it the best ever. There was a write up in a magazine-I think it was Newsweek just about the time I heard about this, so my first time ordering did not make it in time for Christmas. If you LOVE fruit cake you should try it at least once. Warning you might not want to go back.
