    I was gifted a nice chunk of elk meat. However I'm a city girl and have never cooked elk. I'm told it's tastier than venison. Any suggestions on how to cook it? Is it similar to buffalo? I used to make buffalo burgers when we lived in Colorado. I was thinking maybe an elk stew? If so, what ingredients should I add? Any suggestions/recipes would be greatly appreciated.

    I remember my Grandma cooking what she called "Wild meat" and she always added vinegar to the pot. It can't be tasted later but adds some tenderizing to the mix. And removes a lot of the calcium from the bones and leaves it in the liquid for us.
    And of course if it doesn't have much fat, like rabbits and squirrels or deer, then add some to it, interlard it or simply cut slashes in it and add fat and garlic.
    And make soup from the bones with vinegar, don't waste anything.

    I got a recipe from Sunset Magazine for beef stew. I used elk instead of beef and it was FABULOUS, which says a lot because I don't like stew! I've made it probably 20 times, and the only thing I change is I double the recipe (my family loves the leftovers) and I use an entire package of peppered bacon, not just 4 measly slices.

    p.s. It does not take as long as the recipe states - brown the meat, cook the bacon, saute the onion, toss it all in the oven and go quilt for 1 1/2 hours!

    I do this with venison, so you could do this with the elk. Cut into 1 inch cubes. Put in crock pot. Add 1 can cream of mushroom soup, one package of Lipton onion soup, sliced onions, and pepper. Cook on low 8 hours. Serve over rice or egg noodles.

    Thank you all so much. Now I just wish I had more than one roast. I'm keeping these recipes and will try them. Can't wait.
