    Curious. Are there more than one type of rhubarb? My mother-in-law said she had the red cane type and they are just a wee bit "sweeter" than the green canes. I have two plants that I got from my grandmother years ago. Now those plants are huge, have green with a touch of red, and provide more than I can bake with or freeze. This wet spring made them put out lots of leaves. Anywho, I'm wondering.

    There are two types, the red and the green. Some are red all the way through and are not as tart as the type you have or the all green. I have the same as you do and I just put a bit more sugar than the recipes call for.
