    Just made these today...really nice and freeze well

    3/4 c brown sugar
    1/2 c oil
    1 egg
    1/2c sour milk or buttermilk
    1 t vanilla
    1 1/2 c flour
    1/2 t soda
    1/2 t salt
    1/2 c nuts
    1 c finely chopped rhubbake 400 20-25 minutes

    Thank-you! My rhubarb is ready for use. I made couple rhubarb/strawberry pies and I'm ready for something different. I'll try these muffins.

    This recipe sounds delish! Thanks.

    Can anyone tell me if you can freeze rhubarb without chopping it up first. I always pre-chop mine but am not in the mood. Wondering if it will be a bit soggy to cut when it is thawed.

    I just finished two big batchs of rhubarb for the freezer. I cut them up and 2 cups and 3 cups per freezer bag, that way when I thaw I won't have to measure again for the recipe. Might be a bit soggy but they're going to get soggy anyway when cooked. We have one of those sucky bag machines and works out great to freeze things.
