    Default Roasted Cherries

    I love cherries and always buy them when they come in season. They're expensive, but what a treat. I bought some a couple of weeks ago and the DH and I were so disappointed. The cherries tasted blah...no flavor at all. I was about to throw them out when I came across a recipe for "Roasted Cherries." I gave it a try with these not so great cherries and voila! Yummy! I don't have exact, ingredient amounts, but it's pretty easy to make and adjust to your taste.

    I had about 1/2 lb of cherries that I emptied into a pyrex 9x11 casserole dish.
    Baked them until they were shriveled and about 2/3 their normal size...40minutes???
    Drizzled them with just a little Balsamic Vinegar that a friend gave me
    Added just a tiny drizzle of honey.

    That's it! They taste great on yogurt, or ice cream, or over oatmeal.

    Thanks! I'm a cherry lover too. I just bought a bag at the store yesterday. I'll bet they'd be good with cream cheese on top. But then, what isn't?

    This sounds intriguing! It sounds like you didn't pit them before roasting. Will give them a try as I do love cherries but they never seem ripe enough to me here in Vermont, at the end of the supply chain! Thanks!

    Drat!! Wish you would have posted this a couple of days ago! We're having friends over for lunch and Roasted Cherries would have been a unique dessert. I will definitely keep it in mind for next time. One question--did you pit the cherries before roasting?

    I didn't pit them before I roasted them, but I did afterwards. It was easy. I just pinched each cherry between my fingers and the put popped out.

    I was thinking...it would have been good to splash on a bit of balsamic vinegar on them.

    Oh, this sounds really good. I'm thinking over some plain yogurt, maybe with some homemade granola, would be delicious.

    They came out kind of dry, so if you're planning on pouring them over something, add some water and maybe a little lemon juice, or?
